The winter salad


In winter, it’s common to ditch the salad option.

Who wants a light leafy salad bowl when it’s cold outside and all you crave is some comfort food to warm and fill you up?

I found that I was consistently abandoning salads for more substantial hot dishes.

Although there are some great alternatives dishes out there, salads can still be that filling comforter that you crave at this time of year. So don’t ditch the healthy option for a dominoes pizza or bowl of pasta. Instead…I present to you…the winter salad.

It consists of the following:

  • sweet potato

  • avocado

  • kale

  • broccoli

  • spinach

  • raisins

  • chickpeas

  • sweetcorn

  • tomatoes

  • mozzarella

  • lemon juice

  • plain yoghurt

The combination of sweet potato, chickpeas and avocado leave you feeling fully satisfied and the flavours are just so yummy when thrown together.

If you want an even warmer version, it works really nicely if you fry all of these ingredients together with coconut oil, adding garlic and tinned chopped tomatoes to make it extra scrumptious.

Give it a try! This winter salad will definitely not disappoint!
